Echizen Forged Blades, a traditional craft of Fukui
This “sō” kitchen knife was made by a craftsman who lives in Echizen City with the intention of using it with his own child. While inheriting traditional techniques, the knife has been carefully designed so that even beginners can use it with ease. The tip, called kiritaki, is slightly rounded to ease fear, and the handle is designed to be slightly away from the blade. The handle, a combination of straight and curved lines and made in sō’s original vertical round shape, is both easy to grip and non-slip, making it user-friendly. This is a genuine kitchen knife made with traditional techniques, but with a twist at a dangerous point to make it easy for beginners to use.
